- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 large yellow onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
- 1/2 cup dry white wine
- 6 cups beef broth
- 1 bay leaf
- 1 teaspoon black pepper
- 1 pound store-bought or homemade gnocchi
- 2 cups grated Gruyère cheese
- Chopped fresh parsley, for garnish (optional)
Instructions
- In a large pot, melt the butter with the olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring frequently, until the onions are deep golden brown and caramelized, about 25-30 minutes.
- Stir in the minced garlic and thyme, cooking for another 1-2 minutes until fragrant.
- Pour in the white wine, using a wooden spoon to scrape up any browned bits from the bottom of the pot. Let the wine reduce by half, about 3-4 minutes.
- Add the beef broth, bay leaf, and black pepper. Bring the mixture to a simmer and cook for 10 minutes to let the flavors meld.
- Remove the bay leaf and add the gnocchi to the pot. Cook for 3-4 minutes, or until the gnocchi are tender and cooked through.
- Adjust the seasoning with additional salt and pepper to taste.
- Preheat your oven’s broiler. Ladle the soup into oven-safe bowls, top generously with grated Gruyère cheese, and place under the broiler until the cheese is melted and bubbly, about 3-5 minutes.
- Garnish with chopped fresh parsley if desired, and serve immediately.
