Matcha Tiramisu

Ingredients

  • 3 tablespoons matcha powder
  • 1 cup hot water
  • 3 large eggs, separated
  • 100 grams granulated sugar
  • 250 grams mascarpone cheese
  • 1 teaspoon vanilla extract
  • 200 grams ladyfinger cookies
  • 1 cup heavy cream
  • 30 grams white chocolate, for shaving (optional)

Instructions

  1. In a small bowl, whisk together the matcha powder and hot water until a smooth, lump-free paste forms. Set aside to cool.
  2. In a large bowl, beat the egg yolks and sugar until thick and pale. Add the mascarpone cheese and vanilla extract, mixing until smooth. Set aside.
  3. In a separate bowl, whip the egg whites until they form stiff peaks. Gently fold the egg whites into the mascarpone mixture, taking care not to deflate them.
  4. In another bowl, whip the heavy cream until it forms soft peaks. Gently fold the whipped cream into the mascarpone mixture until just combined.
  5. Dip each ladyfinger into the cooled matcha tea, ensuring both sides are coated but not soggy.
  6. Layer the soaked ladyfingers in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers, smoothing the top.
  7. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  8. Cover and refrigerate for at least 4 hours, or until set.
  9. Before serving, sift a light dusting of matcha powder over the top and, if desired, shave some white chocolate for extra decoration.
