Filipino Beef Short Ribs Adobo

Ingredients

  • 1.5 kg beef short ribs
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 cup water
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 tbsp brown sugar
  • 2 tbsp cooking oil
  • Salt, to taste
  • Chopped green onions, for garnish (optional)

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the beef short ribs and sear them until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  4. Return the short ribs to the pot. Add soy sauce, white vinegar, water, bay leaves, black peppercorns, and brown sugar.
  5. Stir the mixture to combine all the ingredients. Bring to a boil, then reduce the heat to low.
  6. Cover the pot and let the ribs simmer for about 30–40 minutes, or until the meat is tender and easily pulled from the bone.
  7. Taste and add salt if necessary. If the sauce is too thin, remove the lid and let it reduce until it reaches your desired consistency.
  8. Serve the beef short ribs adobo hot, garnished with chopped green onions if desired.

Notes

This flavorful dish can be enjoyed with steamed rice or crusty bread to soak up the savory sauce.
