Ingredients
- 1.5 kg beef short ribs
- 1 cup soy sauce
- 1 cup white vinegar
- 1 cup water
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp whole black peppercorns
- 1 tbsp brown sugar
- 2 tbsp cooking oil
- Salt, to taste
- Chopped green onions, for garnish (optional)
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the beef short ribs and sear them until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
- Return the short ribs to the pot. Add soy sauce, white vinegar, water, bay leaves, black peppercorns, and brown sugar.
- Stir the mixture to combine all the ingredients. Bring to a boil, then reduce the heat to low.
- Cover the pot and let the ribs simmer for about 30–40 minutes, or until the meat is tender and easily pulled from the bone.
- Taste and add salt if necessary. If the sauce is too thin, remove the lid and let it reduce until it reaches your desired consistency.
- Serve the beef short ribs adobo hot, garnished with chopped green onions if desired.
