Ingredients
- 3 tablespoons matcha powder
- 1 cup hot water
- 3 large eggs, separated
- 100 grams granulated sugar
- 250 grams mascarpone cheese
- 1 teaspoon vanilla extract
- 200 grams ladyfinger cookies
- 1 cup heavy cream
- 30 grams white chocolate, for shaving (optional)
Instructions
- In a small bowl, whisk together the matcha powder and hot water until a smooth, lump-free paste forms. Set aside to cool.
- In a large bowl, beat the egg yolks and sugar until thick and pale. Add the mascarpone cheese and vanilla extract, mixing until smooth. Set aside.
- In a separate bowl, whip the egg whites until they form stiff peaks. Gently fold the egg whites into the mascarpone mixture, taking care not to deflate them.
- In another bowl, whip the heavy cream until it forms soft peaks. Gently fold the whipped cream into the mascarpone mixture until just combined.
- Dip each ladyfinger into the cooled matcha tea, ensuring both sides are coated but not soggy.
- Layer the soaked ladyfingers in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers, smoothing the top.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or until set.
- Before serving, sift a light dusting of matcha powder over the top and, if desired, shave some white chocolate for extra decoration.
