Ingredients
- 2 cups tomato juice
- 1 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery salt
- 1 tablespoon unflavored gelatin
- 1/4 cup cold water
- 1 cup diced celery
- 1/2 cup chopped green bell pepper
- 1/4 cup finely chopped onion
- 1/4 cup chopped pimento-stuffed green olives
Instructions
- In a medium saucepan over medium heat, combine the tomato juice, lemon juice, Worcestershire sauce, sugar, salt, black pepper, and celery salt. Stir until the sugar dissolves and the mixture is heated through, about 5 minutes.
- In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for 5 minutes to soften.
- After the gelatin has softened, add it to the warm tomato juice mixture, stirring constantly until the gelatin dissolves completely.
- Remove the saucepan from heat and let it cool to room temperature.
- Once cooled, add the diced celery, chopped green bell pepper, finely chopped onion, and chopped olives to the mixture. Stir well to combine.
- Pour the mixture into a mold or shallow dish. Refrigerate for at least 4 hours, or until firm.
- To unmold, run a knife around the edges of the aspic and carefully invert onto a serving platter. Slice and serve chilled.
